WHAT IS KOMBUCHA?

Kombucha, or “booch”, is a fermented black and green tea beverage using a symbiotic culture of bacteria and yeast called “SCOBY.” During the fermentation period, the SCOBY metabolizes the sugar, forming living probiotics that line your digestive tract.

Kombucha originated 2000 years ago in China, and was known as “The Tea of Immortality”. It contains B vitamins, amino acids, antioxidants and probiotics and has been consumed by many other countries for centuries.

Kombucha has more recently become part of the American diet as many have learned of its benefits. However, not all brands are the same and provide what you expect from your kombucha. THE PROCESS

Our kombucha undergoes two steps: primary and secondary fermentation. During primary fermentation, the tea remains in direct contact with the SCOBY. The SCOBY gets to work metabolizing the sugars, generating beneficial acids, bacterias and yeasts in the process. During secondary fermentation, the kombucha is bottled and left to ferment which helps create a refreshing effervescence for you to enjoy.
